Proof Bread is planning to open a location in the Modera Higley Commons mixed use development at 3089 E. Ray Road, Gilbert. It is an Arizona-based community bakery and stone mill that makes sourdough bread, pastries and pizzas. No opening date has been announced, and Higley Commons is still under construction, though move-ins are expected to start this spring. www.proofbread.com
