Omaha-based Flagship Restaurant Group has officially opened Blue Sushi Sake Grill - Surprise at the Village at Prasada, 13442 N. Prasada Parkway.
The new location arrives in the Valley just one month after the brand’s successful Novus Place opening in Tempe.
Blue Sushi Sake Grill, Flagship Restaurant Group’s marquee concept, first debuted in Omaha in 2002 and has since expanded to cities across the country.
Flagship Restaurant Group has more than 50 restaurants in more than a dozen markets, including Denver, Nashville and Austin.
Blue Sushi Sake Grill is open from 11 a.m. to 10 p.m. Mondays through Thursdays, 11 a.m. to midnight Fridays, from 11 a.m. to 11 p.m. Saturdays and from 11 a.m. to 9 p.m. Sundays.
Happy Hour takes place from 11 a.m. to 6 p.m. weekdays and Saturdays and all day on Sundays.
“The brand and its owners are committed to serving high-quality fare while making a positive impact on the world’s oceans through its Conscious Earth mission,” according to a news release. “Flagship Restaurant Group takes pride in partnering with exceptional suppliers who prioritize responsible and ethical practices, helping us serve responsibly sourced food with integrity.”
Blue Sushi Sake Grill merges responsibly sourced seafood with creative ingredients and bold flavors. Guests will arrive to the restaurant to find interior design inspired by Japanese cues filtered through a non-traditional, American lens.
From a backlit collage of a massive Godzilla in the lounge area to a large exterior mural, painted by muralist Muta Vision, the team has reimagined important symbols of Japan that embody heritage, culture and hospitality. Throughout the dining room and lounge, red lantern clouds hang from the ceiling and hand-finished tables that are inspired by carts found in the Tokyo fish markets, custom painted with Kanji characters, await guests.
The private dining room, accommodating 22 to 24 guests, features a cherry blossom wall with vibrant neon sign. The restaurant was designed by Design Collective in collaboration with Flagship Restaurant Group.
Blue Sushi Sake Grill’s menus are fully transparent and include sourcing details for every item that is served.
“From Tilapia sourced in Indonesia to Skipjack Tuna from Japan and Blue Crab from Nicaragua, the Flagship Restaurant Group and Blue Sushi Sake Grill team have made it their mission, through their ‘Conscious Earth’ program, to educate diners about the quality of food they serve, their commitment to responsible sourcing and their ongoing partnerships with the leaders in sustainability and nonprofit organizations focused on animal welfare,” according to the release
Guests at Blue Sushi Sake Grill – Surprise can expect an array of inventive dishes throughout the happy hour, lunch and dinner menus, including gluten-free and vegan items.
Small, medium, and large plates include highlights like the Coconut Crab Soup, made with roasted corn, sweet potatoes, yellow curry, coconut milk, cilantro, and chili oil; the Beef Hot Rock, featuring all-natural beef tenderloin served on sizzling rocks with jalapeño ponzu and yuzu kosho; the brand’s signature Tuna Tower; and the Ceviche, prepared with tilapia, white shrimp, lime juice, cucumber, cherry tomato, avocado, cilantro, sweet onion, jalapeño salsa, wonton crisps, togarashi, and chili oil.
Specialty nigiri and sashimi offerings include the Everything Smoked Salmon, featuring smoked salmon atop cream cheese-stuffed rice tempura, finished with everything furikake, scallion, and ponzu sauce, and the Hirame Tiradito, an olive flounder dish topped with cucumber, red onion, cilantro, corn nuts, aji pepper puree, olive oil, and maldon sea salt.
The Maki menu offers options ranging from raw to cooked rolls, such as the Godzilla Bomb, Green Eggs and Hama, the Snow White, and the Vegan “Cowgirl” roll, made with pickle vegan tempura, sriracha-fried onion rings, BBQ paper, vegan mayo, and tonkatsu sauce.
The robust vegan menu includes more than 15 inventive maki rolls, specialty items like Tofu Lettuce Wraps and Kaluna Crispy Rice Cake (avocado, plant-based spicy tuna, and ponzu), as well as nigiri options including Seaweed Caviar and Unami BBQ Eggplant Eel.
Finally, beverage enthusiasts will enjoy a curated selection of unique cocktails and mocktails.
Highlights include the Kokuto Whiskey, made with Legent Bourbon, Japanese black sugar, and sansho-infused bitters; the signature White Peach Daiquiri, crafted with Bacardi Rum, white peach, lime, sparkling peach sake, and peach boba; and the Hapa Highball, a blend of Toki Japanese Whisky, pineapple, yuzu, and bubbles.
The menu also features a variety of sake, Japanese whisky, zero-proof libations, and selections of beer and wine.
