Veganism is here, one plant-based bite at a time.
While a record 560,000 people around the world signed up for the annual Veganuary challenge, according to The Vegan Society, in which folks use January to go vegan for a month to attempt the diet, one Glendale vegan restaurant sold out of supplies over a recent weekend.
Nadira Jenkins-El, a culinary-trained chef, opened Cosmic Vegans, located at 7145 N. 58th Drive, and will celebrate her six-month anniversary on Valentine’s Day. The small operation, where she mans the front and back of the shop, usually prepares 75 to 85 meals on a given day. On Saturday on the first weekend in February, she sold out her prepared inventory.
