A Phoenix woman won the Rubio’s Coastal Grill fish taco contest, and now her creation will make its way to the restaurant’s menu.
Cynthia Phillips emerged victorious in the Rubio’s inaugural fish taco recipe battle with her Coconut Shrimp Mango Salsa Taco. She beat out hundreds of taco connoisseurs across Arizona, California and Nevada.
Rubio’s will feature Cynthia’s Coconut Shrimp Mango Salsa Taco on the menu in nearly 150 locations now through Tuesday, Oct. 10. Her creation will also be featured for National Taco Day, Oct. 4.
Rubio’s has more than 20 Valley locations, from Phoenix to the West Valley to the East Valley.
