Pizza mogul Marc Malnati knows a good pie when he feels one.

When the owner of the new Lou Malnati’s Pizzeria in Surprise recently called together a group of social media influencers to learn how to make an authentic deep dish pizza, he carefully instructed them through the steps.

“I don’t want that much dough in the elbow (of the pan),” Malnati said, critiquing one of the pizzas. “And I want the sides very tight.”
