How long have you been in business? Our Scottsdale location opened about five years ago.

Briefly describe your business/services offered: Thirsty Lion is a modern gastropub that features an eclectic variety of multicultural cuisines with an emphasis on scratch recipes, craft cocktails, local draft beer and sports viewing. We offer private event spaces for corporate and social gatherings based on our guest’s needs which we are always happy to accommodate. Our menu has something for everyone, including gluten-free and vegetarian options. We are one of the only restaurants in the area to offer happy hour seven days a week as well!

What made you choose this line of work and why is it important or interesting to you? This line of work appeals to me because every day presents a new challenge. It is a fast-paced environment that demands a great deal of time and energy which gives me a real sense of accomplishment at the end of the day. I enjoy the unpredictability of the hospitality industry. I can honestly say it is NEVER boring!

At the end of the day, what brings you the most joy or is the most rewarding aspect of your job? The people I work with every day bring me the most joy. Working side by side with people you truly respect and admire is a reward in itself.

What separates you from your competition? I expect as much from myself as I do from anyone who works in my kitchen. I firmly believe that earning the respect of your co-workers is just as important as any other aspect of the job whether it be food quality or otherwise. I make it a priority to thank each member of my staff before I leave the building so they understand that they are valued. They are the heart and soul of the restaurant and they deserve to be acknowledged EVERY day.

Why did you choose to locate your business in the area? Old Town Scottsdale is such a great destination for out-of-town guests and locals alike. There is literally something that appeals to anyone and everyone whether it is food-related, shopping or purely entertainment.

Where are you from? My family and I moved around a lot when I was growing up due to my father’s career path. I was born in Omaha, Nebraska. We moved to Wichita, Kansas shortly after that and finally settled in Denver, Colorado where I spent most of my childhood. I moved to Scottsdale in 2005 and fell in love with the weather and the laid back lifestyle.

Who was the biggest influence in your life? That’s easy. My mother. She raised me to be self-sufficient, independent and fearless in my pursuit of my dreams. Her love and support has given me the confidence to always speak my mind and stay true to myself. I can honestly say that I owe everything to her.

What advice would you give to someone who wants to be a chef or in the restaurant industry? Come in early, leave late, and be the person that everyone else can depend upon to get the job done.
