Bibiano’s receives Peoria mayor’s award

Mayor Cathy Carlat awarded Bibiano’s Mexican restaurant as Mayor’s Restaurant of the Month for October 2019.

Peoria residents Jose and Paula Rascon were driving by the retail plaza at the southeast corner of 107th Avenue and Olive Road when an empty storefront caught their eye. After 12 years running local carnicerías, they believed this location could be the change their family was looking for.

More than eight years later, the husband and wife team are working alongside their children and a team of dedicated employees to serve the Peoria community with homemade recipes and exceptional service at Bibiano’s Mexican restaurant.

“We are here for our customers – without them, we are nothing,” Ms. Rascon said.

This commitment is clear as she visits each table, greeting guests by name and flashing her warm smile that makes you feel as if you’ve known her for years.

She was raised in the kitchen alongside her mother and grandmother. They helped instill her love of cooking while passing down cherished recipes like their Mexican rice and green chili.

“I love the way the smell of the sautéing rice fills up the entire restaurant. I think all of our regulars know when we are making rice,” Ms. Rascon said.

Using fresh ingredients, she protects those treasured recipes to ensure that every guest will consistently savor the flavors that originated in her grandmother’s kitchen.

The menu includes time-tested favorites like carnitas, chicken enchiladas, and sizzling fajitas, which are available family-style. As with any Mexican food restaurant, great salsa is a must and Bibiano’s delivers. While Ms. Rascon is the artist behind the red salsa, it is Mr. Rascon who mastered the green salsa. No matter which salsa suits your tastes, there is no mistaking the value placed on quality ingredients. As Ms. Rascon said, “We don’t open cans here.”
