Modern Tortilla chooses Litchfield Park as site of first brick-and-mortar restaurant

Aioli Burgers affiliate now open in Fry’s Marketplace

Modern Tortilla, part of the Aioli Gourmet Burgers family of restaurants and food trucks, has opened its first brick-and-mortar location in Litchfield Park Fry’s Marketplace.

“Modern Tortilla was our second food truck concept. It’s been a huge success for us at events and through catering with weddings and large events. To have the opportunity to offer our southwestern style cuisine alongside our other brand is going to be an incredible experience,” said Chef Tommy D’Ambrosio, co-owner. 

The menu at Modern Tortilla in Fry’s, 13730 W. Camelback Road, will include signature tacos like the El Ranchero, 24-hour marinated beef skirt steak, white onions, cilantro, chipotle salsa, fresh lime juice and homemade corn tortillas and Flew The Coop,  chicken tinga tacos with cinnamon, tomatillos, chipotle, roasted bell peppers, salsa verde and cilantro lime corn tortillas.

Other menu highlights include burritos, quesadillas, chicken flautas, Spanish rice, elote and churros.

In addition to a full-service menu, Modern Tortilla will have a cold case where customers can pick up taco kits and other meal prep ingredients to make at home or a grab-and-go lunch.

“Our customers are looking for fresh and convenient meal options for them and their families,” said J.J. Mattison, Fry’s Food Stores deli/bakery merchandiser. “Solutions like Modern Tortilla, Aioli Gourmet Burgers and others offer customers a variety of already prepared or easy-to-prepare options that they can easily enjoy.”

The restaurant group is led under the culinary direction of Chef D’Ambrosio, whose passion for cooking was inspired by his grandmother. 

After graduating from the Culinary Institute of America and completing an apprenticeship at The Greenbrier in West Virginia, he returned to his hometown in Phoenix to open Aioli Gourmet Burgers with childhood friends, Kyle Hollenbeck and Michael Cartolano.

Chef D’Ambrosio is a “Chopped” champion who has competed at the World Food Championships, and has won numerous awards including the Scottsdale Culinary Festival’s Burger Battle several years running.
